INGREDIENTS
4 egg whites
1 level table spoon honey
1 cup fat free plain yoghurt
3 teaspoons corn starch
5ml vanilla essence (or vanilla extract)
Handful of fresh berries of choice (if frozen, thaw first and pat-dry completely)
INSTRUCTIONS
Preheat oven to 180 degrees
Whisk the egg whites, honey vanilla essence and corn starch together.
Gently whisk the yoghurt into the mixture
Place fresh and dry berries into a baking dish
Evenly scoop the yoghurt mixture on top of the berries.
Place the yoghurt and berry mixture into the oven for 25min or until the yoghurt has set and is firm in the centre.
Switch oven off but keep the cake inside the oven until room temperature is reached.
Remove from oven, serve and enjoy
